Soup Your Family Will Eat - Chicken Tortilla Soup




First off you should know I'm not a food blogger here. So don't judge.

My kids love this recipe, I love this recipe, guests love this recipe. Win, win win. Pick up a rotisserie chicken from somewhere (Costco wins on this one) and all you have to do is cut the veggies. If I make a large batch, I use the entire thing.


I also love the condensed chicken stock they sell at Costco (better than bouilon) or use chicken broth or stock. Skip cubed bouilion because it contains MSG - and it doesn't taste very good.


To be extra healthy you can soak your black beans from the night before to reduce bloating from beans, but I never have problems with the canned ones.


And as always, make a ton so you have healthy lunches all week!


Here's how to make this one.


Chicken tortilla Soup

Ingredients

1 rotisserie chicken or grilled chicken

5 carrots chopped

5 celery chopped

1 large onion chopped small

2 cloves garlic chopped small

1 bell pepper

1 jalapeno

Chicken Broth + a cup of water

1-2 cans of diced Italian or Mexican tomatoes

2 TBS Chili powder

2 TBS lime juice

1-2 cans black beans drained

salt and pepper to taste


Optional toppings

Avocado

Black Bean Quinoa chips

Cheese


Chop carrots and celery and sauté in avocado oil. Add onions, garlic, bell pepper, and jalapeño and cook until soft. Add chicken broth. I usually add in enough to cover everything up which can be about 5- 6 cans of chicken broth, but its going to be your preference here. Add in tomatoes and chili powder. (Add less chili powder if your children hate anything remotely spicy). Simmer for 30 min. Add black beans and lime juice. Add Optional toppings and serve!
