PB Balls
I love these little bites! I make the recipe weekly and store them in my fridge. But they pack well if I need to take them around with me all day, They hold together even when warm. They are the perfect snack to launch me until I can eat a real meal.
Recipe:
Grind 2 cups raw almonds in a food processor.
Add 20 medjool dates- one at a time while mixing (I pit mine as I go. The ones you buy already pitted are often too dry and need soaking first)
Add a dash of sea salt,
1/2 cup natural peanut butter (I use Adams Crunchy No-sir (Regular PB is pumped with toxic hydrogenated oil‘s and has added sugars...so convert to natural!)
1/4 heaping cup raw cacao powder (more nutritional than cocoa powder that is heat treated and more processed)
1 Tbs pure maple syrup
Once my food processor is no longer mixing it well, I dump it in a bowl and use my clean hands to blend it together. Then I form balls. My serving size is 2 balls.
P. S. If yours are too dry to ball then drizzle a teaspoon of water at a time until you reach the right consistency. These hold together but are not sticky!
